    Harvest

    The olives are hand-picked around mid-October and taken to the mill daily to be processed within 12 hours. Our oil is filtered to preserve its properties for a long time.Stored without air and at a controlled temperature. Bottled and labeled on the estate.

    Production

    Cultivation is carried out using only natural fertilizers produced on the estate and treatments permitted in organic farming. The olive groves are grass-covered, and most of the trees are centuries old.

    At first it is a delicate taste that grows and becomes powerful and intense. The aftertaste is elegant, balsamic and very dry, a perfect companion to strongly flavoured dishes.
